Looking for a last minute dinner recipe you’re family will enjoy? Today I’m sharing my mom’s Easy Stuffed Shells Pasta Recipe! This was a family favorite growing up in my house and it’s now a family favorite in our home as well. It’s super easy to put together quickly and everyone loves it! I love my stuffed shells smothered in sauce, but my father actually enjoyed his stuffed shells without sauce. My mom would make a huge batch and we’d have some leftover in the refrigerator to heat up for the next night.
Growing up in an Italian household we had pasta pretty often. I loved when my mom made any pasta recipe because she would have a huge pot of sauce simmering away on the stove all day and the aroma filled the house. She would wake up really early on Sunday morning to start the sauce. To continue that tradition with my own family, we typically enjoy our pasta dishes on Sunday as well. We always make sure to sit down and enjoy Sunday dinner as a family, and this dish is perfect for that.
I love a meaty sauce, but when it comes to my stuffed shells I love them simple because they are so flavorful all on their own. I use my Sunday Sauce, quick marinara recipe, or even a high quality store bought sauce if I’m making this dish on a busy weeknight which is how you can turn this into a 30-minute meal. I have also added in sausage, ground beef, ground chicken, or sautéed spinach. The options are really endless when you’re making stuffed shells and you really only need to keep the cheese mixture simple, add ins are always fun and optional!
