This Peanut Butter and Strawberry Jelly Bars recipe goes out to all my fellow strawberry jelly lovers out there. Honestly, I have never been a fan of typical peanut butter and jelly sandwiches because I really prefer strawberry jam over grape jelly which is what my mom always had in our pantry growing up. Now that I’m a mom myself, I completely understand why – it’s cheaper!
I have two little boys of my own who practically live on PB&J sandwiches. Whether they’re on bread or in tortillas as roll-ups, they’re happy as clams at lunchtime. My oldest starts first grade this year, which means he’ll be staying at school for lunch for the first time. I’m so excited to start packing him yummy lunches! And since our local elementary school is peanut-free, I’ve been coming up with a lot of after school snacks and treats to welcome him home. These Peanut Butter and Strawberry Jelly Bars are perfect for that!
- ¾ cup butter, softened
- ¾ cup creamy peanut butter
- 1 cup brown sugar, packed
- ½ cup sugar
- 2 tsp baking powder
- ¼ tsp salt
- 1 tsp vanilla extract
- 2 eggs
- 2¼ cup flour
- ¾ cup strawberry preserves
- 4 cups strawberries, hulled and diced
- In the bowl of a stand mixer, cream together butter and peanut butter. Add in brown sugar and white sugar. Beat well.
- Add in baking powder, salt, vanilla, and eggs. Beat until well combined.
- Gradually add in flour, scraping sides of bowl to incorporate all ingredients.
- Spread peanut butter mixture into the bottom of a greased 9 x 13 baking dish. Bake at 350 degrees for 25 minutes. Cool completely.
- Spread strawberry preserves evenly over cooled bars. Sprinkle chopped strawberries evenly over preserves. Cut into bars and serve. Store leftovers in the refrigerator.
