Fun and easy-to-make Creamy Chili Mango Popsicles. A simple summer dessert with only a handful of ingredients. Who knew healthy ingredients could create such a sweet treat?
Remember fun, summer treats growing up as a kid? I would literally light up each time I heard the signature ice cream jingle as the truck drove up the street. Choosing the ice cream or popsicle flavor was such a big decision as you (usually) only got one. As adults we typically graduate to store-bought ice cream for our cold desserts, but we can still enjoy nostalgic treats.
These Creamy Chili Mango Popsicles bring back the childhood cheer in a surprisingly healthy, yet delicious treat. Being an adult and more aware of the foods I put into my body, healthy and natural ingredients are increasingly important. With these popsicles you know exactly what goes into them.
Full fat coconut milk has numerous health benefits and mangoes add natural sweetness and fruity flavor. Simply blend the ingredients together and coat the chili sugar mixture for a true Mexican-flavor inspired treat that’s made of all natural and mostly healthy ingredients.
Tips: Peeling and cutting mangoes takes a bit of work, so to save time you can use frozen mango chunks. I use them all the time in smoothies and they’re easy to keep on hand. Defrosting them or using fresh mangoes makes blending easier. This recipe is highly adaptable as well. Use more or less honey depending on how sweet you prefer your popsicles. The sugar coating is optional and can be omitted for a healthier option. Use more or less chili powder to modify spiciness as well.
Home Chef Tip: Don’t completely blend the mango mixture to leave in small bits of mango.
Ingredients
- 1 (14.5-ounce) can coconut milk
- 2 cups mango chunks
- Juice of one lime, plus one or more extra
- 3 tablespoons honey
- 1 cup granulated sugar
- 1 tablespoon chili powder
Instructions
- Place coconut milk, mangoes, lime juice, and honey in a blender or food processor. Blend on high until smooth.
- Pour mixture into popsicle molds and freeze at least 4 hours, or until frozen through.
- Mix sugar and chili powder together and spread out on a flat surface or plate. Slightly coat popsicles with additional lime juice, then press both sides on mixture to coat with chili-sugar and enjoy.
